Baltic-style porters were that region's interpretation of the Imperial Stouts - the very strong, dense beers commissioned from London by Catherine the Great, Empress of Russia. The Baltic brewers made their version at low temperatures using lager yeasts and locally available ingredients. As have we. The result is rich and dense yet with a creamy lightness. The aromas given off are dark chocolate, butterscotch, and freshly brewed coffee. The beer has a warming character on the palate, leading to fig jam and apple treacle flavours and finishing with a pleasant bitterness. For a beer of this strength, there is a surprisingly thirst-quenching mouthfeel and drinkability.

Food Pairing Suggestions: Oysters, smoked fish with a good butter and nice brown bread; hearty stews of slow-cooked dark meats; sticky toffee pudding, chocolate tart with sour cream; cheeses - particularly smoked cheese or creamy, washed rind cheeses
